Tastes Like Summer: Black Bean & Avocado Salad

Temperatures are arisin’ here in the midwest which has me excited for the tastes of summer. In fact, we plan to grill out this week for the first time this year – I can’t wait!

I had a couple avocados on hand that were at the perfect stage so I knew they needed to be eaten Right. Now. I knew those finicky, delicious things would be goners by tomorrow.

So I put together this Black Bean & Avocado Salad with tomato, onion, and cilantro – and it couldn’t be easier. Simply chop, combine, and eat!

The black beans are a great source of protein and fiber, so it makes for a filling lunch. It also could be a delicious side salad to burgers on the grill or a Mexican fiesta. It’s fresh and satisfying.


Black Bean Avocado Salad

Black Bean Avocado Salad


1 can black beans, rinsed & drained
2 avocados, chopped
3 medium ripe tomatoes, chopped
1/4 cup onion, diced
1 clove of garlic, minced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Sea salt and freshly cracked pepper, to taste


Combine the drained black beans, tomato, onion, garlic, and cilantro in a bowl. Drizzle lime juice over the black bean mixture and mix until well combined. Gently fold in the avocados.

Season with sea salt and fresh cracked pepper to taste. Serve immediately.
